**Ingredients:**

- 200 grams of cornstarch biscuits
- 110 grams of butter
*For the Filling:*
- 6 grams of gelatin
- 3 tablespoons of water
- 1 can of sweetened condensed milk
- 200 grams of cream
- 1 cup of concentrated passion fruit juice
*For the Syrup:*
- 1 passion fruit unit
- 1/2 cup of sugar
- 1/2 cup of water
**Instructions:**
**For the Base:**
1. In a food processor or blender, pulse the cornstarch biscuits until they turn into fine crumbs (you can also crush them by hand or place them in a bag and crush them with a rolling pin).
2. Add the butter and mix until the crumbs become moist (add the butter gradually, as the amount needed may vary depending on the brand of biscuits and their moisture).
3. Transfer the dough to a pie mold, preferably one with a removable bottom, and press it onto the bottom and sides, ensuring it's well-packed (the mold I used is 17cm in diameter).
4. Place the crust in the fridge for at least 1 hour or until it firms up.
**For the Filling:**
1. In a container, dissolve the gelatin in warm water, stirring well until it's completely dissolved. Set it aside.
2. In a container or blender, combine the condensed milk, cream, and passion fruit juice, and start blending.
3. While blending, add the hydrated gelatin and continue blending for about 5 minutes or until the mixture becomes smooth and firmer.
4. Transfer this filling to the crust and refrigerate for 4 to 6 hours or until it's cold and firmer.
**For the Syrup:**
1. In a saucepan, combine the passion fruit pulp, water, and sugar. Cook over medium heat, stirring occasionally, until the syrup thickens and becomes shiny.
2. Keep the heat low and watch it carefully, as the syrup tends to bubble up.
3. Allow the syrup to cool completely, and then drizzle it over the pie.
