This Blueberry Cheesecake Crumb Cake is an absolute treat for your taste buds! With a delectable blend of crumbly cake, luscious cheesecake, and plump blueberries, this dessert will make your heart sing with joy. Here's how to make it:
**Ingredients:**
*Crumb Cake:*
- 3 and 1/3 cups of flour
- 2 teaspoons of baking powder
- ¼ teaspoon of salt
- 2/3 cup of cold butter (cut into cubes)
- Grated zest from 1 lemon (optional)
- 1/3 cup of light brown sugar
- 1/3 cup of sugar
- 2 eggs
- 1 teaspoon of vanilla
*Blueberry Cheesecake Filling:*
- 8 oz. of mascarpone
- 8 oz. of softened cream cheese
- ½ cup + 2 tablespoons of caster sugar
- 2 tablespoons of cornstarch
- 2 eggs
- 1 teaspoon of vanilla
- 1 and 2/3 cups of blueberries
*Glaze:*
- ½ cup of powdered sugar
- 2–3 teaspoons of milk
**Instructions:**
1. Preheat your oven to 350°F. Line the bottom of a 9-inch springform pan with parchment paper, spray the bottom and sides of the pan with nonstick cooking spray, and set it aside.
2. In a large bowl, stir together the flour, baking powder, salt, brown sugar, sugar, and lemon zest. Add the cold, cubed butter to the dry ingredients. You can work it with your hands, press it with a fork, or use a mixer. Continue until the mixture becomes grainy.
3. Add the eggs and vanilla, and mix until combined. The mixture should have a crumbly texture. If it's too sandy, squeeze it with your fingers to form pea-sized crumbs.
4. Press about 2/3 of the mixture into the bottom and sides (about 1 ½ inches in height) of the pan. Place the pan and the remaining crumbs in the fridge.
5. To make the filling, mix together the cream cheese, mascarpone, vanilla, sugar, and cornstarch until just combined. Add the eggs and mix gently; do not overdo it.
6. Pour half of the cheesecake mixture onto the chilled crust and scatter about 2/3 cup of blueberries over it. Spread the remaining cheesecake mixture over the blueberries. Top it with more blueberries and the remaining crumbs.
7. Bake at 350°F until golden brown and a toothpick inserted into the center comes out clean, which should take about 65-75 minutes. If it starts browning too much, tent the top with aluminum foil.
8. For the glaze, stir together the powdered sugar and milk. If it's too thin, add more powdered sugar; if it's too thick, add more milk.
Yummy! This Blueberry Cheesecake Crumb Cake is ready to be enjoyed. It's a delightful dessert that's sure to please your taste buds and impress your guests.
